Couscous with Pine Nuts and Dried Fruit
Ingredients: 2 cups couscous, 2 cups boiling water, 1/2 cup toasted pine nuts, 1/2 cup mixed dried fruit (like apricots, raisins, cranberries), 1/4 cup extra-virgin olive oil, 1/4 cup fresh lemon juice, salt and pepper to taste.
Process: Place the couscous in a large bowl, pour the boiling water over it, cover the bowl, and let it stand for 5 minutes. Fluff the couscous with a fork and stir in the pine nuts, dried fruit, olive oil, and lemon juice. Season with salt and pepper to taste before serving.
