Pine Nut Hummus with Fresh Pita Bread
Ingredients: 1 cup canned chickpeas, 1/4 cup fresh lemon juice, 1/4 cup well-stirred tahini, 1 garlic clove minced, 2 tablespoons olive oil, 1/2 cup toasted pine nuts, salt to taste, 2-3 tablespoons water, dash of ground paprika, and pita bread.
Process: In a food processor, blend the chickpeas, tahini, lemon juice, garlic, and salt until smooth. Drizzle in the olive oil while blending. Add water if needed to achieve a creamy consistency. Stir in half of the pine nuts. Transfer to a bowl and top with the remaining pine nuts and a dash of paprika. Serve with warm pita bread.
