Lamb Chops with Pine Nut and Mint Relish
Ingredients: 8 lamb chops, 1/2 cup toasted pine nuts, 1/2 cup chopped fresh mint, zest and juice of 1 lemon, 1/4 cup olive oil, salt, and pepper.
Process: Preheat a grill or grill pan to medium-high. Season the lamb with salt and pepper. Grill until charred and cooked to desired doneness. Meanwhile, in a bowl, mix the pine nuts, mint, lemon zest, lemon juice, and olive oil. Season with salt and pepper. Serve the lamb with the pine nut-mint relish.
