Penne Pasta with Sun-Dried Tomato Cream Sauce and Pine Nuts
Ingredients: 500g penne pasta, 1 cup sun-dried tomatoes, 1/2 cup toasted pine nuts, 2 cups heavy cream, 1 cup grated Parmesan cheese, 1/2 cup chopped fresh basil, salt and pepper to taste.
Process: Cook the pasta according to package instructions until al dente. Meanwhile, puree the sun-dried tomatoes in a food processor. In a saucepan over medium heat, warm the heavy cream and stir in the sun-dried tomato puree. Allow the sauce to simmer for about 10 minutes. Stir in the Parmesan until melted and smooth. Toss the cooked pasta with the sauce, toasted pine nuts, and fresh basil. Season with salt and pepper to taste before serving.
