Pine Nut and Cherry Quinoa Salad
Ingredients: 1 cup uncooked quinoa, 2 cups water, 1/2 cup dried cherries, 1/2 cup toasted pine nuts, 1/4 cup extra-virgin olive oil, 1 tbsp apple cider vinegar, salt and pepper to taste.
Process: Rinse quinoa under cold water until the water runs clear. Place it in a saucepan with water, bring to a boil, then reduce the heat and simmer covered for about 15 minutes, or until quinoa is cooked and water is absorbed. Let it cool. In a large bowl, combine the cooled quinoa, dried cherries, and toasted pine nuts. Drizzle with olive oil and apple cider vinegar, then season with salt and pepper. Toss gently to combine before serving.
