Spaghetti with Garlic, Olive Oil, Chili, and Pine Nuts
Ingredients: 500g spaghetti, 4 garlic cloves, thinly sliced, 1/2 cup extra-virgin olive oil, 1 teaspoon red pepper flakes, 1/2 cup toasted pine nuts, salt to taste.
Process: Cook the spaghetti according to package instructions until al dente. In the large pan, add the red pepper flakes to the garlic and olive oil, sauté for a few more seconds. Drain the spaghetti, reserving a cup of the pasta water. Add the drained spaghetti to the pan with garlic and oil, toss well to combine. If the pasta looks dry, add a little of the reserved pasta water. Mix in the toasted pine nuts, then season with salt to taste. Serve immediately, optionally garnish with fresh parsley or grated Parmesan cheese.
