Vegan Lentil Loaf with Pine Nuts
⦁ Ingredients:
⦁ 2 cups cooked green lentils
⦁ 1 cup walnuts, finely chopped and toasted
⦁ 1 cup pine nuts, toasted
⦁ 1 medium onion, finely chopped
⦁ 2 cloves garlic, minced
⦁ 2 tablespoons olive oil
⦁ 2 tablespoons soy sauce
⦁ 2 tablespoons tomato paste
⦁ 2 tablespoons fresh parsley, chopped
⦁ 1 teaspoon dried thyme
⦁ Salt and black pepper to taste
⦁ 1 cup breadcrumbs
Process:
0. Preheat your oven to 375°F (190°C) and line a loaf pan with parchment paper.
1. In a large pan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until the onion becomes translucent. Add the cooked lentils, soy sauce, and tomato paste. Stir well and cook for a few more minutes.
2. Remove the pan from heat. Add the toasted walnuts, pine nuts, parsley, thyme, salt, and pepper. Mix everything together.
3. Transfer the mixture to a food processor and add the breadcrumbs. Pulse until the ingredients are combined but still have some texture.
4. Press the mixture into the prepared loaf pan, smoothing the top with a spoon.
5. Bake for 35-40 minutes or until the loaf is firm and the edges are slightly brown. Let it cool before slicing.
