Chocolate-Dipped Pine Nut Brittle

Ingredients:
⦁ 2 cups sugar
⦁ 1/2 cup light corn syrup
⦁ 1/4 cup water
⦁ 1/2 teaspoon salt
⦁ 2 cups pine nuts, toasted
⦁ 2 teaspoons baking soda
⦁ 1 teaspoon vanilla extract
⦁ 8 ounces dark chocolate, melted

Instructions:
⦁ Line a baking sheet with parchment paper.
⦁ In a heavy-bottomed saucepan, combine sugar, corn syrup, water, and salt. Cook over medium heat, stirring occasionally until the sugar has dissolved. Once the mixture is boiling, stir in the pine nuts.
⦁ Continue to cook, stirring often, until the mixture reaches 300°F on a candy thermometer.
⦁ Remove from heat and immediately stir in the baking soda and vanilla, taking care as the mixture will bubble up.
⦁ Pour the mixture onto the prepared baking sheet, spreading with a spatula. Let cool completely, then break into pieces.
⦁ Dip each piece into the melted chocolate, then place on a wire rack to set.
