Pine Nut and Matcha Green Tea Cake
Ingredients: 2 cups all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon salt, 1 cup unsalted butter, 1 cup granulated sugar, 3 large eggs, 1 tablespoon matcha green tea powder, 1/2 cup milk, 1 teaspoon vanilla extract, and 1/2 cup toasted pine nuts.
Process: Preheat the oven to 350°F (175°C) and grease a 9-inch cake pan. In a bowl, whisk together the flour, baking powder, and salt. In another bowl, beat the butter and sugar until creamy. Beat in the eggs one at a time. Stir in the matcha powder. Add the flour mixture in three parts, alternating with the milk and vanilla, beginning and ending with the flour. Stir in the pine nuts. Pour the batter into the pan and bake until a toothpick inserted into the center comes out clean, about 40 minutes. Let cool before slicing.
