Pancakes with Pine Nut Butter and Organic Mulberries
Ingredients: 1 cup all-purpose flour, 1 tablespoon sugar, 1/2 teaspoon baking powder, 1/2 teaspoon baking soda, 1/4 teaspoon salt, 3/4 cup buttermilk, 1/4 cup milk, 1 large egg, 2 tablespoons unsalted butter, 1/2 cup pine nuts, 1/2 cup organic mulberries.
Process: In a food processor, blend the pine nuts until smooth to make pine nut butter. In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk together the buttermilk, milk, egg, and 1 tablespoon melted butter. Stir the wet ingredients into the dry until just combined. Heat 1 tablespoon butter on a griddle over medium heat. For each pancake, spoon 2 tablespoons of batter onto the griddle and cook until bubbles appear on the surface, then flip and cook until golden. Serve the pancakes with pine nut butter and mulberries.
