Classic Italian Pesto Pasta Salad
Ingredients: 500g pasta of your choice, 2 cups fresh basil leaves, 1/2 cup toasted pine nuts, 1/2 cup grated Parmesan cheese, 2 garlic cloves, 1/2 cup extra-virgin olive oil, salt and pepper to taste, cherry tomatoes and mozzarella balls for garnish.
Process: Cook pasta according to package instructions. While the pasta is cooking, blend basil, pine nuts, Parmesan, garlic, salt, and pepper in a food processor until smooth. Drizzle in olive oil while blending until it forms a smooth paste. Once the pasta is cooked and cooled, toss it with the pesto sauce, cherry tomatoes, and mozzarella balls.
